The concept

At the Sueco Cookery School we aim to offer a fresh approach to cooking with exciting cookery courses that emphasise “hands on” involvement, quality ingredients and inspirational teaching. Our intention is to get you to touch, smell and taste food using your hands as the prime tool. The school is informal with the cookery courses putting emphasis on superfresh ingredients that are cooked simply and deliciously. Set in our commercial outside catering kitchens, the Sueco Cookery School will provide you with fundamental cookery techniques and methods that can be applied whether you’re working in a professional kitchen or entertaining at home. You will each have a work section including preparation area, chopping board, portable gas hobs and other essential equipment!

The course leaders, teaching assistants and support staff will impart enthusiasm and a long lasting love of good food. What ever your level of skill, from beginner to proficient amateur, if cooking is your passion our courses will take you to new levels! We have a range of courses: savoury or sweet, traditional or contemporary. We feel that we can cater to every taste! However if can’t find a course that suits you then there is a bespoke option, let us know what you would like to learn and we will design a teaching package for you. If you would like to learn in your home with private tuition or a small group of friends, just ask. Relaxed, informal, flexible and professional are the key ingredients of the Sueco Cookery School!

So if you would like to come as an individual, with a group of friends, or perhaps have a unique birthday, stag or hen party then please do not hesitate to get in touch. The Sueco Cookery School can also work for corporate events such as team building, “sports and social” nights, or a reward for your staff.

The food

To inspire you in your kitchen, we will provide you with the knowledge, confidence and technical skills to either impress your friends or provide greater diversity of food for your family. This will be done through demonstrations and small bite size pieces of theory and practical cookery in a safe, relaxed and informal environment.

The courses

Far Eastern 20 Jan - 17 Feb

An exotic exploration of Asian cuisine.

An exploration of the exotic and fragrant food from Malaysia, Bangladesh, Vietnam, Cambodia, Pakistan and Korea. You will learn how to cook curries, stir fries, soups and much more.

Kitchen Confidence 2 Mar - 30 Mar

A fantastic introduction to kitchen basics.

If you haven’t cooked much before, and want to learn the basics, this course will teach you the basic culinary skills to prepare a range of simple and delicious dishes.

Taste of the Med 27 Apr - 25 May

From Turkey to Italy, discovered the flavours of the Mediterranean.

The flavours of the Mediterranean are wide and varied, from the fragrant spices of Turkey, to the aromatic herbs of Italy; this course will conjure memories of delicious meals in lands of sun and sea.

Summer Entertaining 8 Jun - 6 Jul

Seasonal dishes from vibrant salads and light mains to BBQ marinades and desserts.

Delicious seasonal and simple dishes, fresh vibrant salads, light mains and prepare ahead puds! It will also feature BBQ marinades and side dishes ensuring your summer barbecues are gastronomic delights, not charred offerings!

Fish skills* 13 Jul - 20 Jul

Two nights of seafood expertise using locally caught fish.

Two nights of seafood expertise; showing you the best way to prepare, cook and serve fish. We are blessed in Guernsey with superb locally caught fish and will use, wherever possible to use only line caught, sustainable fish.

Just Baking 7 Sept - 5 Oct

Perfecting patisserie and baking biscuits.

From the Cupcake craze to the perfect scone; this course will cover many aspects of making cakes, produce pastry and pies, perfecting patisserie and baking biscuits.

The South Americas 12 Oct - 9 Nov

Delve into the delicious and varied cuisine of Brazil, Argentina, Mexico, Cuba and Peru.

Building on the growing popularity of South American food and in particular Brazil, Argentina, Mexico, Cuba and Peru, you will learn how to make tamales to tacos, ceviche, empanada, Brazilian feijoada (stew) and cornbread, to name but a few!

Festive Fayre* 23 Nov - 7 Dec

Get readt for Christmas with three nights of seasonal recipes..

Adorn your halls and get into the festive spirit. Three nights of seasonal inspired recipes, from mincemeat, and mince pies, homemade relishes, Christmas pudding and / or cake, get ahead tips and edible gifts!

All Evening courses are located at Beau Sejour concourse kitchens and run from 6.30pm – 9pm approx. When a cookery school night coincides with a Bank Holiday, the evening will be rescheduled on a convenient Tuesday.

All courses run for 5 weeks and cost £195
unless marked with an asterisk.

Please ensure you can make all dates, as these evenings are non-transferable.
All courses can be designed into half / full day bespoke experiences - POA.

Group cooking classes

With themes including; Traditional Far Eastern flavours, Rustic Italian, Canapés, World Street Food, Sushi, South American Cuisine, Fish & Shellfish and Pasta & Sauces, there really is something for everyone!

A demonstration evening

Sit back and relax as you watch our brigade of chefs prepare dishes from around the world!

After the demonstrations there is an opportunity to taste the food and talk to the chefs.

An evening of active cookery

The chef provides you with hints, tips and a short demo, then it is up to you as you attempt to recreate his dishes!

Ready, Steady… Cook!

Three teams, three chefs, lots of ingredients and three hours to prepare a wining menu!

After the food preparation there is an opportunity to sit together and sample each other’s food.

The Sueco Cookery School is based at; Beau Sejour Leisure Centre.

Sueco Outside Catering Ltd, Commercial Kitchens, Beau Sejour Leisure Centre, Amherst, St Peter Port, GY1 2DL

Perry’s Map reference (You can pick these up at the airport) F3.

The kitchen is just before the Concourse doors at the back of Beau Sejour. As you approach the Concourse entrance you will see a ramp leading up to the kitchen door, where the team look forward to meeting you.
